For the pork tenderloin wrapped in bacon and potatoes, season the pork tenderloin with salt and pepper and sear briefly. Then wrap it in bacon.

Cook the potatoes in the steamer or on the stove, peel and grate. Season with caraway seeds, salt and pepper and spread the potato mixture on a sheet of baking paper.

Place the pork tenderloin wrapped in bacon on the potato mixture and roll up into a roll. Cook in the oven at about 140 degrees for about 1 hour.

For the fried arugula, sauté the arugula briefly in olive oil, add cherry tomatoes and season with salt and pepper. Slice the finished fillet roll and serve with the fried arugula.
