Stir flour, 1 pinch of salt, 2 tbsp. sugar, milk and eggs, swell for 3o min. Peel mango, cut flesh into wedges from the stone. Heat 1 tbsp butter in a frying pan (18 cm ø), pour in a small amount of batter, pour in a few mango slices, drizzle with a small amount of batter, bake until golden brown. Turn, bake, turn repeatedly to the other side, sprinkle with 1 tsp sugar, caramelize under the broiler for 2-3 min.
Keep warm and bake 3 more pancakes. Serve with lime yogurt.
Tip: Always use an aromatic ham, it will give your dish a wonderful touch!
