For the lime oil, wash the limes thoroughly with hot water and rub dry. Peel the lime peel thinly with a peeler – remove the bitter white skin completely. Cut the peels into fine strips.

Empty the canola oil into a large glass or earthenware container. Add the lime peel strips and allow to infuse, covered, for about 2 weeks. Then transfer to bottles and store in a cool, dark place.
