Instructions:

Soak the lentils in cold water for one night. Heat the clarified butter in a saucepan, add the chopped onion and vegetables and sauté until soft.

Add the soaked and drained lentils and the diced pancetta and fill up with clear soup. Add the chopped garlic clove and the spices and cook for about 15 minutes.

Add the potato cubes and cook until al dente. Finally, season with iodized salt and freshly ground pepper and serve with hot sausages.

Hearty farmhouse bread is recommended as a side dish.
