For the grain bread, mix the yeast in a little water and dissolve. Mix the flours. Add salt, chia and flax seeds, sunflower seeds and sesame seeds.
Now add the lukewarm water with the oil and yeast and knead into a smooth dough. Cover and let rest for 1 hour.
Now remove the dough from the bowl and knead again with floured hands. Then divide the mixture and form bread loaves. Place on a baking sheet and let rise, covered, for another 30 minutes.
Then brush with water and cut with a sharp knife. Now place in the oven at 200 degrees convection and bake for 10 minutes.
Now lower the temperature to 180 degrees and bake for another 20 minutes.
