Cut the garlic into thin slices, deseed the chili peppers and cut them into strips. Heat the olive oil not too much and let the garlic color in it. Add the chili peppers and reduce the heat. Add the glass eels to the oil and cook, stirring constantly, for about 1 minute (do not fry!) and remove. Arrange on warmed plates.
