Pour double the amount of hot water on the couscous and let it rest covered for 15 minutes.
When the water is absorbed, mix the couscous with a wooden spoon so that the grains become loose, if they are stuck together.
Stir in the apricot seed cream.
Pit the apricots, cut them into small pieces and stir them in along with the pistachios and pomegranate seeds. Season to taste with the cream and serve.
