Instructions:

First prepare the shortcrust pastry for crumbly Christmas packages: To do this, knead a firm shortcrust pastry from flour, powdered sugar, egg, finely diced butter and lemon juice. Wrap in plastic wrap and let rest in a cool place for 1 hour.

Approx. 15 minutes before the end of the resting time, preheat the oven to 175 °C (gas: level 2). Line baking trays with baking paper or grease.

Roll out the dough thinly on a lightly floured work surface. Cut out small packages with a suitable cookie cutter, or cut them out of the dough using a sharp knife and a suitable template. Place on the prepared trays and bake for about 10 minutes until light. Let cool.

For the filling and glaze, melt the butter. Once it is liquid, mix it with powdered sugar and lemon juice until smooth. If the mixture is too thin, fold in more powdered sugar until it thickens and is spreadable.

Spread a thin layer of filling on each cooled cookie and assemble with a second cookie. Brush tops of assembled cookies with remaining lemon glaze. Let dry.

Meanwhile, melt chocolate glaze according to package directions. Decorate the glazed cookies with the chocolate glaze as desired – we traced the outlines of the packets, for example.

Allow shortbread Christmas packets to dry completely and store in a cookie tin.
