Instructions:

Use only the green of the zucchini, peel thickly, clean bean pods and cut all together into tender strips. Blanch briefly in half a liter of clear soup. Coarsely dice onions and peppers, finely dice garlic and peppers, and sauté in a small amount of oil in a large saucepan.

Roast ground beef and season heartily with salt, cayenne pepper, cumin and cilantro.

Add the mince to the onions in the saucepan, and pour on the clear soup. Add tomato puree and pizza tomatoes. Cook a little, then add the drained canned beans. Mix well, heat and finally add the sage and finely chopped green onions form. Mix with the beans and the zucchini.

Season to taste, fill into deep plates and perhaps round off with a dollop of crème fraîche. The best accompaniment is pita bread. Bon appétit!
