Instructions:

Melt the sugar in a saucepan and caramelize, quench with the water and cook a little bit.

Peel the pears, remove the core and caramelize them in equal pieces in the sugar solution. Just before they are cooked, perfume them with the Williams brandy.

Serve with chocolate-ginger pudding.

Tip: Feel free to use better chocolate – the more delicious the result!
