Put the Parmesan cheese, pine nuts and basil in a hand mixer and add the olive oil leisurely. Now add mayo, salt and pepper. Heat a few drops of olive oil in a non-stick frying pan. Now add the calamari and lightly fry for two to three minutes. Drain off the liquid. Add the ouzo and pour off again when the alcohol is completely absorbed. Now add the basil pesto sauce and arrange the potatoes and calamari in two layers so that they both form a round shape on the plate. Finally, decorate everything together with basil leaves.
