Preparation yeast dough: Put the flour in a suitable bowl. Make an indentation in the center and crumble the yeast into it. Add sugar and about 100 ml of lukewarm water and mix with a little flour from the edge to form a thick dough. Cover and let rise in a warm place for about 20 minutes. Add olive oil, salt and about 75 to 100 ml of lukewarm water and knead first with the dough hook of the mixer, then with your hands until the dough is smooth. Cover and let rise repeatedly for half an hour in a warm place. Grease the grease pan of the oven and sprinkle with flour. Roll out the dough on a little flour and spread it on the pan. Form a rim about 2 cm high.

Preparation of topping: quarter or eighth the paricas, clean and rinse them. Fry in portions in hot oil and season with salt and pepper. Spread the peppers and drained olives evenly on the yeast dough. Mix salt, eggs, sour cream or crème fraiche, pepper, nutmeg and chopped thyme and pour over the peppers. Coarsely crumble the feta cheese and sprinkle over the top.

Bake in a heated oven at 200 degrees, fan 170 degrees, gas mark 3 for about 30 minutes. Cool slightly and cut into pieces. Tastes good warm or cooled down.

Brigitte viva! tip: Instead of peppers, you can also use steamed leek rings, fennel quarters, carrot slices or roasted zucchini.
