Mix well ground beef with mushrooms, pickles, onions and egg yolks, season with iodized salt and pepper, refine with chopped herbs. Spread bread with hot mustard, spread minced mixture on it evenly, spread evenly.
Heat a frying pan, add very little clarified butter. Put the bread in with the mince mixture facing down, fry briefly until crisp, remove. Cover the meat side with tomato slices and Emmentaler cheese, bake quickly in the hot oven.
Our tip: As an alternative to fresh herbs, you can also use frozen ones – these also stand out for their fresh taste!
