Place the bread slices in a suitable bowl.
Peel and finely chop the shallots, dice the bacon and finely chop the parsley.
Sauté shallots and bacon cubes as well as chopped parsley in hot butter and add to the bread slices.
Heat the milk and pour over it. Season with salt, pepper and nutmeg. Do not stir and let stand for 30 minutes.
Mix the eggs, add and mix well without kneading much. Season again.
Bring plenty of salted water to a boil.
Form dumplings from the bread mixture with moistened hands (two per person) and cook in lightly simmering water for 15 minutes. Be careful that the water does not come to a boil.
Lift out the dumplings with a sieve ladle, drain well and serve immediately.
