Instructions:

Coarsely grate the carrot (not in slices, chop the bell bell pepper very small (blitz chopper), parsley finely chopped, tomatoes coarsely chopped, fresh spinach coarsely chopped and the white part of the leek finely chopped.

Mix all ingredients and swell for about 15 min. Shape into flat “cutlets”, bake leisurely in butter (clarified butter) until done. Serve with a leek and tomato sauce.
