(*) Avocado pasta with shiitake goat cheese, mushrooms, tomatoes and pine nuts For the pasta dough, mash the avocado flesh with the juice of one lemon. Add the eggs and mix thoroughly. In a large baking bowl, mix the flour and salt, add the avocado and egg mixture and mix until a smooth dough forms. If the dough is too dry, fold in a tiny bit of whipped cream . Knead the dough for 5 minutes until it is smooth and pliable. Leave to rest for 1 hour. Pass through the rollers of the pasta machine and roll out thinly, cut into ribbon noodles with the special attachment.

To prepare the sauce, heat the olive oil in a heavy frying pan, pour in the mushrooms and sizzle over high heat for 1 minute. Pour in the stock and bring to the boil. Add the tomatoes, thyme, pepper, butter and goat’s cheese, cook gently for a short time and stir to dissolve the cheese. Remove the frying pan from the stove.

Cook the spaghetti in enough boiling salted water in 2-3 min al dente on the stove. Strain, drain and mix with the sauce.

Serve in portions on plates and put on the table, sprinkled with pine nuts.
