For the asparagus in pita toast, first peel the asparagus and cook in water until al dente. In the meantime, prepare the pita.
To do this, in a bowl, mix the flour and water well with the olive oil and work on the work surface to form a smooth dough. Now strain the asparagus, set aside and let cool a bit.
Pat the asparagus well with a kitchen towel, it should be well dry.
Work the dough on a floured work surface. Cut away portions of the dough that are not too small and roll out into a (palm-sized) surface.
Top this with 1/2 slice of cheese – add half a slice of ham on top. Cut an asparagus spear in half and place the two halves on top of the ham.
Now cover with half a slice of ham and half a slice of cheese and fold up the patty. Press the edges of the dough well together.
Heat a little olive oil in a pan and fry the pita toasts well on both sides for a few minutes. Cut the pita toats in half for serving and garnish with parsley and serve the asparagus in the pita toast.
