Preheat the oven to 180°C for the apple and curd slices. Peel the apples, grate coarsely and mix with the juice of the lemon. Roll out the puff pastry to the size of a baking sheet and place it on a baking tray lined with baking paper. Mix the curd, sour cream, sugar and eggs briefly with a mixer, then stir in the flour, pudding powder and salt. Spread this mixture evenly on the puff pastry and sprinkle with brown sugar. Bake the apple and topping slices for about 35 minutes (the sugar should take some color).
