A great cake recipe for any occasion:
Quickly knead a shortcrust pastry from egg yolks, butter, flour and sugar, form a ball, wrap in foil and refrigerate for 1 hour.
Preheat the stove to 200 °C.
Grease a cake springform pan with 28 cm ø.
Roll out the dough and cover the bottom, prick a few times with a fork. Pre-bake in the oven for 15 minutes.
Remove peel from apples, halve, core and cut into very narrow wedges, drizzle with juice of one lemon on the spot.
Mix layered cheese with sour cream, curd cheese, egg yolks, sugar, vanilla sugar and grated lemon peel and the corn starch. Whip the egg whites until very stiff and gently fold into the mixture.
Spread about 2/3 of the apples evenly on the base.
Place the cake ring around the base, pour in the curd mixture and evenly distribute the remaining apple slices on top of the curd mixture.
Bake in the oven for about 50 minutes. Heat the jam, pass it through a sieve and spread it on the apples. Sprinkle almond flakes on top and sprinkle with a little powdered sugar.
