For the apple dessert, mix curd cheese with mascarpone, milk, powdered sugar and vanilla paste and chill. Quarter apples, peel and remove core. Then cut into fine slices.
Bring wine with sugar, vanilla sugar and lemon peel to a boil, add apple slices and cook until soft. Put in a cool place.
Pour half of the apple mixture with juice into 4 dessert glasses, cover with half of the mascarpone cream, then add apple mixture again and the remaining mascarpone cream on top.
Decorate the apple dessert with the cookies and serve.
