Rub waffle pattern, finish baking in deep fat, season with salt, top each with a blob of ricotta and a piece of smoked eel and garnish with a fried arugula leaf.

Remove the skin from the apple and carrots, grate and marinate with sugar, pepper, salt, olive oil and juice of one lemon. Roughly dice half of the cleaned mushrooms, sauté in butter, season, add a dash of whipping cream and reduce. Cook an omelette mixture with whole egg, salt and pepper and finish in butter.

Arrange everything on a large plate and bring to the table as an appetizer platter.

Tip: Do you know purple carrots? They are an old, very aromatic variety – why not use them for a change!
