For the dates: Cut open the fruit and remove the stone. Coarsely chop the walnuts and fill the dates with them.
For the almond milk: Bring the milk and almond kernels to the boil and cool. Season with orange blossom water and set aside to cool.
Stuffed dates and almond milk are served before the meal as an appetizer. It looks beautiful when the dates are arranged on a large platter with fresh rose petals. The iced almond milk is served in small glasses (e.g. grappa or possibly sherry glasses).
