For the apple jalousies with gingerbread spice, preheat the oven to 180 °C. Peel and coarsely grate apples, mix with sugar and gingerbread spice.

Roll up the puff pastry and enlarge it slightly with the rolling pin. Divide the puff pastry into 12 parts. Cut each piece 3 times with a pastry wheel up to the center.

Brush the pieces all around with water. Divide the apple filling among all the pieces and fold them together. Place on a baking tray lined with baking paper and brush with beaten egg.

Bake the apple jellies with gingerbread spice in the preheated oven until golden brown.
