Preheat the oven to 180°C.
For the apple strudel, sift the flour into a bowl and make a well in the center.Add all the other ingredients for the dough into the well, mix and knead quickly with all the flour to form a smooth dough.It should not stick to the work surface (board) or hands.Form a loaf of dough, cover with a damp kitchen towel and let rest for 1 hour at room temperature.
Meanwhile, for the filling of the apple strudel, fry breadcrumbs in butter.Peel the apples, halve, core and cut into slices about 4-5 mm thick. Mix with the remaining ingredients for the filling.
Roll out the dough on the flour-dusted work surface or on a tablecloth as far as possible, lift the dough with the back of both hands and slowly and carefully pull it out on all sides until the dough surface becomes paper-thin. Spread the filling on the dough, roll it up with the help of the cloth and place it on a baking tray (lined with baking paper).
Mix the egg and melted butter and brush the apple strudel with it.bake in the oven for about 45 minutes.
