Blanch (scald) the peaches with boiling hot water, peel, pit and cut into small pieces. Steep the flesh with the juice of the lemons and the sugar for one night. Bring to a boil and bubble for five minutes, stirring throughout. Grate and add ginger, then add amaretto to taste and stir through. Pour into glasses.
