For the zucchini noodles with fresh goat cheese sauce, cut zucchini into noodles with a spiral slicer. Chop onions, sauté with 1 tablespoon olive oil until translucent, pour in Soy Cuisine and simmer for a few minutes.
Add goat cheese and let it melt in the sauce. Season sauce with chopped herbs, salt and pepper. Chop the garlic and sauté in a pan in the remaining olive oil.
Add the zucchini noodles and sauté just until hot. Salt the zucchini noodles and serve together with the fresh goat cheese sauce.
