Rinse the peas thoroughly in a sieve and place in a saucepan. Peel the onions and garlic clove, cut them into fine cubes and add them. Add the bay leaf and fill with enough water to cover the vegetables. Bring to a boil, cover the pot with a lid and cook on low heat for about 1 hour until the peas are soft. Stir repeatedly in between and perhaps add a little water. In the meantime, clean the spring onions, cut the onions with the light green leek into fine rings, set aside. Then drain the peas over a sieve, collecting the cooking water. Put the vegetables in a saucepan, remove the bay spice, add 50ml of olive oil and mash everything together. Season with salt, pepper and juice of one lemon to taste. Arrange the pea puree in a baking dish, drizzle with the remaining olive oil and sprinkle with the spring onions.
