Chicken breast with cashew nuts Gai Pad Med Mamuang

Cut chicken breast into strips, soak in soy sauce and a little oil for 10 minutes. Heat oil in a wok or frying pan and stir-fry the nuts until golden brown. Remove the nuts with a slotted spoon and drain on kitchen roll. Rinse the spring onions and cut into 2 cm long pieces. Rinse tomatoes and cut into large cubes. Rinse mushrooms and cut into large cubes. Heat oil in wok or frying pan, add chicken strips and fry for two minutes. Add onions, mushrooms, tomatoes and cashew nuts and stir-fry everything together. Reduce temperature and season everything together with fish sauce, oyster sauce and sugar.
Tip: The dish can also be prepared with garlic, which is fried in a frying pan or wok before frying the chicken breast.
