For the pickled pumpkin, bring all ingredients except pumpkin to a boil and reduce slightly, add pumpkin cubes and cook for about 30 minutes. It should be soft but not overcooked. Remove the cinnamon and cloves, cook for another 5 minutes, pour the pumpkin into jars and seal. Add raisins if desired.
You can replace some of the sugar with jelling sugar to give it a better binding, but don’t boil it as long, stir it in about 5 minutes before adding the pumpkin cubes and let it boil. Cinnamon and cloves I give when cooking in a sieve, then you can remove them better
