Cut chanterelles lengthwise into 5 mm thick slices. Mix vinegar, oil and finely chopped garlic with salt and pepper.

Place the chanterelles in a shallow baking dish and pour the marinade over them, cover with basil and finely chopped red onions, leave in the refrigerator for 1 day, bring to the table at room temperature.
