For the tomato sauce, place the paradei puree in a tall, narrow mixing bowl.
As when preparing a homemade mayonnaise, stir in the olive oil very slowly and drop by drop with a hand blender.
This creates a bright red, deliciously creamy and great tomato-scented sauce that is versatile as a barbecue sauce or as a base for making many other barbecue sauces.
Season the sauce with lemon juice, balsamic vinegar, salt and pepper.
Serve the tomato sauce immediately with grilled food.
