A great pasta dish for any occasion:
Chop shallots, saute in fat until soft. Mix in mascarpone and sour cream, heat. Season with salt, pepper and mustard (be careful: salmon is salty!). Pull mustard cream at low temperature.
Coarsely chop salmon, rinse and select cress, remove hard stems, coarsely chop.
Make spaghetti, drain. Mix salmon with the cream and fold in the spaghettis. Spread cress evenly on top.
