For the fire toast, shred the beef. Cut the bacon and onion into small cubes. Clean the leek carefully and cut into pieces, chop the parsley. Remove seeds from chili pepper and cut into rings.
Heat the pancetta in a deep frying pan and brown the onions in the bacon fat. Add the shredded beef and fry well. Add the leek and fry briefly.
Stir in Ajvar and chopped parsley and pour in beef broth. Season with chili rings, curry, salt and pepper.
Simmer on low heat for 15 to 20 minutes. Finally, stir in the sour cream – the sauce should not be simmering at this point.
Cut the remaining two onions into rings.
Toast the slices of brown bread and place on preheated plates. Cover with the hot ragout. Before serving, top the fire toast with the onion rings.
