* Crush 4-6 people of palm sugar in a mortar to fine pilver. Chop beef into very fine strips. Put in baking dish with onion, ginger, garlic, sugar and soy sauce. Mix well, cover with foil and let sit for an hour, stirring occasionally.
Heat oil, brown corn cobs, green onions, chilies and bamboo shoots for 1 1/2 min, stirring throughout, then remove. Heat skillet to very hot and stir-fry meat briefly until it begins to color.
Mix fish sauce, tap water and cornmeal, add to meat with marinade and stir until thickened.
Add greens back to skillet and saute all, stirring, for 1-2 minutes.
!! : If you replace the chilies with green and red peppers, the dish is less acrid, but ditto tasty and appetizing to look at.
