For the summer avocado soup, peel the cucumber and cut into coarse pieces. Pit the avocados and spoon them out of the peel.

Squeeze limes and add all ingredients, except for some cilantro and tomatoes, to a stand blender. Blend until well blended.

Chop the tomato and cilantro and add to the soup for garnish.
