Instructions:

Sauté the shallots in butter until soft. Add the peas and cook for a few minutes. Extinguish with clear soup, add the chopped mint leaves and simmer gently for 10 minutes.

Finely mash the soup, refine with cream, season with salt and pepper.

The purist will not only mash this soup, but then spread it through a hair sieve.
