A great pasta dish for any occasion:
Mix all ingredients and knead into a smooth dough. Wrap in plastic wrap and rest for at least 1-2 hours.
Roll out dough very thinly on floured surface. Dry for 30 minutes.
Cut noodles of any width by hand with a sharp kitchen knife. It is easier with a pasta machine. Pass the dough through the pasta machine in batches and then cut into strips of any width. Either dry the pasta or cook it fresh in boiling hot salted water for 5-6 minutes until al dente.

If the chestnut flavor is too intense, use only a quarter chestnut flour and 3/4 whole spelt flour.
