For the May punch, pour half of the apple cider into a punch bowl. Tie the spice bouquet in a linen bag and add it, hang the woodruff on a string, taking care that the (slightly poisonous) stems still stick out. Leave to chill for about 15 minutes. Then remove the spice bouquet and the woodruff, add the remaining apple cider, sugar to taste and stir well. Before serving, pour the May punch with cider or sparkling wine.
