For the spicy sauce, finely chop the shallots and boil down with 4 tablespoons white wine, 4 tablespoons water and white wine vinegar until half.

Then pour in gravy and let it boil away. Mix in finely chopped gherkins and herbs and season the spicy sauce with salt and pepper.
