Simmer Welschriesling, water, sugar, lemon and spices for about 5 minutes and add the pears. Cook slowly for about 1-2 minutes and cover to cool. Remove the pears, bring the stock to the boil, thicken with cornflour and strain – leave to cool. Arrange the pears, cover with the stock, sprinkle with brittle and pistachios and garnish with the mint.
This goes excellently with Ja! Natürlich vanilla or chocolate ice cream.
