For the shortbread snow cookies, cut the butter into cubes and quickly knead with yolks, vanilla sugar and flour to form a shortbread dough, wrap with plastic wrap and refrigerate for one hour.

Preheat the oven to 160 °C and line a baking tray with parchment paper.

Roll out the dough to a thickness of about 3 millimeters, cut out cookies in any shape and place them on the tray. Bake in the oven for 10 minutes on the middle shelf until light.

For the meringue layer, beat egg whites with granulated sugar until stiff and pour the mixture into a piping bag or plastic bag, cut off the tip and place a dab of foam on each cookie. Bake the cookies in the oven for another 10 minutes.

Remove the shortbread snow cookies from the baking paper and let them cool.
