Instructions:

Heat the sauerkraut. In the frying pan fry finely chopped shallot with oil. Add foamy beaten eggs seasoned with pepper and salt. Spread the sauerkraut evenly on top.

Sprinkle with chive rolls and fold the omelet. Serve with mashed potatoes.

Our tip: Always use fresh chives if possible!
