For the pork tenderloin with Gorgonzola sauce, season the meat with salt and pepper. Heat clarified butter in a frying pan and sear the meat on all sides over medium heat for about 15 minutes. Then remove from the frying pan and keep warm.

Peel and finely chop the shallots. Sauté in the roast residue in the pan, dust with flour and deglaze with soup. Add whipped cream. Cut Gorgonzola into small pieces and add, mix well so that the cheese dissolves and a creamy sauce is formed.

Chop walnuts and raisins and stir them into the sauce, season with a little juice and grated lemon, some salt and strong pepper.

Cut the meat into slices and cover with the sauce.
