For the egg dish with Gorgonzola, whisk eggs with a dash of mineral water, pepper and salt very little. Cut the gorgonzola into small pieces and mix in.
Peel the young onion, wash and cut into fine rings. Peel the peppers, cut them in half, remove the seeds and white membranes and cut them into small pieces.
Heat vegetable oil in a frying pan and fry the bell pepper pieces well. Add the onion rings and fry briefly.
Add the egg and Gorgonzola mixture, stir gently and cook over medium heat for about 5 minutes.
Divide among warmed plates, sprinkle with parsley and serve with wholemeal bread or fresh rolls.
