Cut the chili peppers into small slices. When preparing chilies, it is best to wear rubber gloves, because a few varieties can burn like hell on the skin. Never touch your mouth, eyes or nose before washing your hands! Pickle the chopped chilies in the fish sauce and the juice of a lemon.

Tip: Pickled chilies are in Thailand in small containers on the tables to spice up the dishes individually.
