First, cut the mushrooms into slices. Slice the leeks, wash and spin dry.
Preheat the oven to 180 °C top heat. Heat olive oil in a pan and fry mushrooms until brown on both sides.
Add leeks and continue frying until they are soft. Add salt and pepper. Add eggs, mix well and let fry.
Sprinkle sunflower seeds on top, place in oven and let surface set for about 5 minutes.
Sprinkle chive rolls over the finished frittata and serve with bread and fresh salad.
