Cover the baking tray with baking paper. Place the wafers on it. Preheat the oven to 175 °C top/bottom heat.

Mix granulated sugar and vanilla sugar. Beat the egg whites until stiff, gradually adding the sugar. Gently stir in coconut flakes and eggnog.

Pour the mixture into a piping bag and pipe onto the wafers. Bake for about 15 minutes.

The eggnog coconut biscuits should not get too dark. Since not all baking ovens are the same, it’s best to stick around and keep checking.
