For dried tomatoes with thyme, line a baking tray with baking paper and drizzle some olive oil on it and sprinkle salt and pepper.

Preheat the oven to about 80 degrees. Wash the tomatoes and cut them into slices about 1 cm thick and spread them on the tray. Sprinkle the top of the tomato slices with salt, pepper and the sugar.

Cut the orange peel into zests and spread them on the tomatoes. Spread the thyme sprigs on the tomatoes as well and put everything in the preheated oven for about 1 hour.

After an hour, turn off the oven and let the tomatoes cool (preferably overnight) in the oven. Pour the tomatoes into the jars and add enough olive oil to cover the tomatoes completely.

Close the jars tightly. The tomatoes will keep for several months in the refrigerator.
