Preheat the oven to 150°C for the curd cheese pancake.
Mix curd cheese, sour cream, yolk, lemon and orange peel until smooth. Beat egg whites with sugar and salt until creamy. Sift flour through a sieve. Fold in the snow and flour alternately and finally add the raisins.
Grease large baking dish with butter and sprinkle with flour. Pour the mixture into the dish and bake at 170°C until golden brown.
Then tear the pancake into large pieces with 2 spoons.
