Spice the onion with the bay spice (1) and clove (2).
Bring water to boil with salt, pepper, larded leek, garlic cloves, onion, celery, peeled carrots and parsley.
Pour in meat, make 2 1/2 hours with lid closed.
Cut the brisket into slices. Cook the sauce with above ingredients and bring to table separately.
